delicious mini egg cups

I've always seen these mini egg cups while scrolling through pinterest looking for healthy recipes, so I finally decided to try them out for my website and I'm so glad I did. These mini egg cups are so delicious. There great to make ahead at night so they will be already for breakfast in the morning. You can also customize these and make them your own. Hope you enjoy this recipe as much as I did.





ingredients:

  • some spinach

  • several mushrooms

  • 4 eggs (the original recipe call for 5 eggs, but I only needed 4)

  • cooking spray (I strongly recommend using cooking spray, if not they are really hard to get out of the pan)

  • black pepper

  • salt

  • a little cheddar cheese

equipment:

  • you will need mini muffin tins (you can also use regular muffin tins you will just need to use more eggs)

instructions:

  • first, preheat your oven at 350 degrees

  • cut up your mushrooms and spinach finely

  • whisk your eggs

  • put some mushroom, spinach, and cheddar cheese into each muffin cup

  • pour the egg mixture into the muffin cups

  • then season with some salt and pepper

  • finally, bake for 20 minutes
